What applications can sodium caseinate be featured in?

Sodium caseinate offers many functional benefits to a variety of applications. Sodium caseinate functions best in coffee creamers, processed cheeses, whipped toppings, ice cream, baked goods, dietary supplements, and in meat as an additive. Sodium caseinate is the most soluble of the caseinates and lends itself to well to provide stability in foams. Sodium caseinate absorbs and emulsifies fats in applications which ensures a homogeneous product.  

 

What are some product formulation considerations when using sodium caseinate?

Sodium caseinate displays excellent solubility in solution but will have trouble with dispersion when first adding to the powder to the liquid component. While some other milk proteins can be used as either a nutritional fortification element and/or a functional component, sodium caseinate primarily functions as a functional component due to difficulties with dispersion.
